Delightful Birthday Cake Macarons that combine the joy of macarons with the flavors of a classic birthday cake.

  • 1 3/4 cup powdered sugar
  • 100 grams egg whites (about 3 large eggs)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Buttercream frosting (for filling)
  • Sprinkles (for decoration)

Instructions

  1. Preheat the oven to 300°F (150°C) and line your baking sheets with parchment paper.
  2. Sift together the almond flour and powdered sugar to remove any lumps.
  3. Whisk the egg whites until foamy, then gradually add the granulated sugar and whisk until stiff peaks form.
  4. Fold in the sifted almond flour and powdered sugar mixture, along with the vanilla extract and salt.
  5. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
  6. Let the piped macarons sit for about 30 minutes to form a skin.
  7. Bake the macarons for 15-20 minutes until they have a slight shine and a dry outer shell.
  8. Once cool, spread or pipe buttercream frosting on the flat side of one macaron and sandwich another macaron on top.
  9. Adorn the assembled macarons with festive sprinkles.
