A light and refreshing angel food cake infused with the tangy flavor of key limes, perfect for any gathering or sweet craving.

  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon salt
  • 1 cup egg whites (about 8 large eggs)
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lime zest
  • 1/2 cup fresh key lime juice
  • Powdered sugar for dusting
  • Whipped cream for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) to prepare for baking the cake.
  2. Sift together the cake flour, 3/4 cup of the granulated sugar, and salt in a medium bowl.
  3. Beat the egg whites with the cream of tartar until soft peaks form, then gradually add the remaining sugar while beating until stiff peaks form.
  4. Fold in the flour mixture, lime zest, and vanilla extract until just combined, then pour into an ungreased tube pan.
  5. Bake for 35-40 minutes or until golden and the cake springs back when touched; invert until cool.
  6. Remove from the pan, drizzle with fresh key lime juice, and dust with powdered sugar before serving.

Notes

Ensure mixing bowls and beaters are completely clean and dry for whipping egg whites. Use room temperature eggs for better whipping results.
