A nostalgic dessert featuring ripe bananas caramelized in brown sugar and butter, baked in a fluffy cake.

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter and brown sugar together in a round cake pan over low heat until bubbly.
  3. Remove the pan from heat and arrange sliced bananas over the caramel mixture.
  4. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  5. Cream together the granulated sugar and egg until light and fluffy.
  6. Beat in the vanilla extract and buttermilk.
  7. Add the dry ingredients to the wet mixture and mix until just combined.
  8. Pour the batter over the bananas in the pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let the cake cool for a few minutes before inverting onto a plate.
