Deliciously moist and naturally sweetened muffins made with wholesome ingredients, perfect for breakfast or a snack.

Ingredients

  • 1 cup rolled oats
  • 1 cup mashed ripe bananas
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. Combine the rolled oats, mashed bananas, milk, honey, and oil in a large bowl. Mix well.
  3. Mix together the baking powder, baking soda, cinnamon, and salt in another bowl.
  4. Add the dry ingredients to the wet ingredients and stir until combined.
  5. Fold in the chopped nuts or chocolate chips if using.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before serving.

Notes

For a gluten-free option, use certified gluten-free oats. Store in an airtight container at room temperature for up to three days.
