Chewy and healthy Banana Oatmeal Cookies made with ripe bananas and oats, perfect for satisfying your sweet tooth.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas until smooth in a mixing bowl.
  3. Add the rolled oats, peanut butter, honey (or maple syrup), vanilla extract, cinnamon, and salt to the bananas. Mix until well combined.
  4. Fold in the chocolate chips if using.
  5. Scoop tablespoon-sized portions onto the baking sheet, flattening them slightly.
  6. Bake for 10-12 minutes or until golden.
  7. Allow to cool before enjoying.

Notes

For extra chewy cookies, do not overbake them; take them out when they are still slightly soft in the middle.
