Deliciously moist banana muffins topped with a sweet, crunchy crumb topping, perfect for breakfast or a snack.

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour (for crumb topping)
  • 1/4 cup cold butter (for crumb topping)
  • 1 teaspoon cinnamon (for crumb topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Mix the mashed bananas with the melted butter.
  3. Stir in the baking soda and salt.
  4. Add the sugar, beaten egg, and vanilla extract; mix well.
  5. Incorporate the flour and mix until just combined.
  6. Prepare the crumb topping by combining the flour, brown sugar, cinnamon, and cold butter.
  7. Pour the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Sprinkle the crumb topping generously over each muffin.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool before serving.

Notes

Store muffins in an airtight container for up to 3 days at room temperature or freeze for up to 3 months. Use overripe bananas for the sweetest flavor.
