Deliciously moist banana chocolate chip muffins, perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the mashed bananas, sugar, vegetable oil, egg, and vanilla extract in a mixing bowl, mixing until smooth.
  3. Add baking soda and salt to the mixture, then stir in the flour until just combined.
  4. Fold in the chocolate chips gently.
  5. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool for a few minutes in the tin before transferring to a wire rack to cool completely.
