2 cups cooked chicken, shredded
4 slices bacon, cooked and crumbled
1 cup chipotle ranch dressing
2 cups shredded cheese (cheddar or Monterey Jack)
4 large flour tortillas
1 tablespoon olive oil
Optional: chopped green onions, jalapeños, or cilantro for garnish
Instructions
In a bowl, combine shredded chicken, crumbled bacon, and chipotle ranch dressing. Stir well until mixed.
Heat a large skillet over medium heat and add olive oil.
Place one tortilla in the skillet and sprinkle half of the cheese over it.
Spread half of the chicken and bacon mixture over the cheese.
Top with the remaining cheese and place a second tortilla on top. Cook for 3-4 minutes until the cheese is melted and the bottom tortilla is golden brown.
Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden brown.
Remove from skillet, let cool slightly, cut into wedges, and garnish if desired.
